Spaghetti and Macaroni Pasta Recipe

Description
• Spaghetti/macaroni are the most popular pasta in Nigeria.
Spaghetti/macaroni is a quick staple food in Nigeria.
• Pasta is well made from wheat flour.
• Pasta is native to the italians.

Main Ingredients
•1 pack or 500 grams spaghetti
•4-5 Fresh tomatoes
•Pepper to taste
•1 large onion bulb
•1/2 Dried thyme
•2 Garlic cloves
•Salt to taste
•Chicken/meat stock
•Seasoning cubes to taste
•2 cooking spoons Vegetable oil
•2 cooking spoons of crayfish

Optional Ingredients
• Protein of choice: (shreded chicken, shreded beef, sliced sausage, shreded fish, corned beef, chopped liver, shrimps/prawns, or sardines)

• Veggies of choice: (green/red/yellow bell pepper, spring onion, carrots, cabbage, green peas, green beans or sweet corn)

• Leaf of choice: (pumpkin leaf, scent leaf, curry leaf or bay leaf)

• Garnish of choice: (sliced tomatoes, sliced spring onions, sliced cucumber or hard boiled eggs)

Alternative Ingredients
•Pasta of choice
•Onion of choice
•Spices of choice
•Fried or dried pepper
•Vegetable oil of choice
•Fresh tomato or tin tomato
•Fresh or dried garlic/ginger
•Chicken/meat stock or water

PREPARATION
•Scrape, wash and chop your veggies of choice, to your desirable sizes.

•Wash and chop your meat of choice into small chunks, marinate the meat for at least 30 minutes to 1 hour. Steam the Protein of choice, shred, fry separately if necessary and set aside.

•Wash and slice your tomatoes, onion and pepper to your desirable sizes.

•Wash your vegetable leaf of choice thoroughly and chop to your desirable sizes.

PROCEDURE
Parboiling the spaghetti

Step 1: Break your spaghetti into sizes of choice or you can break one strand of spaghetti into 3 pieces and put it into a pot of boiling water on high heat. When it has come to boiling point, add a little drops of vegetable oil and salt. Allow it to come to a simmer for about 7 to 10 minutes, depending on the brand of the pasta you use and take it off the heat.
•Note: You can also add your pinch of salt and vegetable oil in the boiling water, before adding your spaghetti.
•Note: The vegetable oil prevents the pasta from foaming/boiling over while cooking and it also help the pasta from sticking together.
•Note: Make sure you use enough water to par-boiled your spaghetti.
•Note: Make sure you allow the water to boil before adding the spaghetti, if not it will soak water.

Step 2: When the spaghetti is cooked, pour it in a sieve and drain the water.
•Note: Just make your pasta cooked, but not too soft.

Prepare the sauce

Step 3: Place your vegetable oil in a pot on medium heat and allow it to hot. When the vegetable oil is hot, add in your chopped onions, garlic and ginger and stir-fry for for 1 to 2 minutes or until the onions translucent or turn brown.

Step 4: Add in your curry powder, thyme, and bay leaf and continue stir-frying, to avoid burning.

Step 5: Then add in your chopped tomatoes and peppers, and continue stir-frying for 3 to 4 minutes.

Step 6: Add in your veggies of choice and continue stir-frying, to avoid burning.

Step 7: Add in your Protein of choice and continue stir-frying to avoid burning.

Step 8: Then add in your meat stock or water to your preference and allow it to boil for 1 to 2 minutes.

Step 9: Add in your spices of choice, seasoning cubes to taste and salt to taste and stir very well to incorporate.

Adding the spaghetti

Step 10: Add in the par-boiled spaghetti, stir well to coat with the sauce, lower heat to low heat and stir to avoid burning. Allow the spaghetti to simmer for about 4-5 minutes on low heat.

Step 11: Test for your seasonings and readjust if necessary. Bring it down from heat and your indomie noodles is ready.
•Note: you can garnish your spaghetti with your sliced bell pepper, sliced tomatoes, sliced spring onion or vegetable leaf of choice.

How to serve/eat spaghetti

  • You can serve your spaghetti with any chilled soft drink of choice.
  • Yourspaghetti can be served along with stew or sauce of choice, if it is cooked white plain.
  • Yourspaghetti can be serve with hard boiled eggs or fried eggs.
  • spaghetti is best serve hot/warm.

Spaghetti can be served alongside with the followings:
•Spaghetti with fried eggs.
•Spaghetti with boiled egg.
•Spaghetti with Veggies.
•Spaghetti with fried plantain.
•Spaghetti with Sardine.
•Spaghetti with Salad.
•Spaghetti with Chickens.
•Spaghetti with Stew/sauce.
•Spaghetti with fried potato egg.
•Spaghetti with tea and bread.

Tips for making spaghetti

Tip 1: Jollof spaghetti recipes is probably more common, making Jollof spaghetti is almost the same way as making the Nigerian Jollof rice. All other kinds of pastas can be used to replicate this dish.

Tip 2: You can use your left over stew to eat or cook your pasta.

Tip 3: Your spaghetti should not be soggy when cooked.

Tip 4: You can choose to cook the spaghetti without the veggies.

Tip 5: You can fridge the remainder for a day or 2 days.

Tip 6: Make tomatoes sauce or stew to make your spaghetti. You can also cook you spaghetti plain and eat it with stew or any sauce of choice.

Tip 7: When the spaghetti is stick together, you can separate them by adding cool water on them and they will separate.
